Oceana Grill’s executive chef Kenneth Cornin, Jr. went back to his Lafourche Parish roots to help create a slamming seafood dish, Redfish Lafourche.
The seafood lovers’ dish puts fresh, blackened Louisiana Redfish over a serving of garlic mashed potatoes. Then, the Redfish gets topped with a savory crawfish étouffée and fried, crunchy crawfish.
Oceana Grill’s blackened Redfish was recently featured on “The Simpson’s” when the iconic cartoon characters ate almost everything in New Orleans.
We went behind-the-scenes in the kitchen to see how Cornin makes this flavor-packed dish.
