Oceana Grill puts their own Cajun twist on poutine.
In the basic recipe for poutine, French fries are covered with cheese and topped with brown gravy. Well, Oceana Grill puts their own twist on the traditional French dish, calling it the Cajun poutine.
Executive chef Kenneth Cornin, Jr.’s version of this dish combines fresh seafood and mushrooms in a creamy cheese sauce, which gets piled high over French fries and topped with shredded cheddar cheese.
Ingredients for Oceana Grill’s Cajun Poutine:
- cooking oil
- Creole seasoning
- black pepper
- blackened seasoning
- fresh minced garlic
- holy trinity (onion, bell pepper, celery)
- fresh Louisiana shrimp
- heavy whipping cream
- shredded cheddar cheese
- parmesan cheese
- fresh Louisiana crabmeat
- crawfish tails (optional)
- French fries
First, heat cooking oil in a saucepan. Then, add all the seasonings, fresh minced garlic, holy trinity and mushrooms. Next, add shrimp and sauté, stirring with ingredients. Add heavy whipping cream and allow to heat up. Then, add the shredded cheddar cheese and parmesan cheese. Stir and allow to reduce. Next, add fresh Lousiana crabmeat and crawfish tails and stir generously until all ingredients are cooked and form a thick sauce. To plate, add a generous portion of French fries to a plate and top with seafood cream sauce. Garnish with shredded cheddar cheese.
