NOLA Pizza Co. set to open inside NOLA Brewing Tap Room on Nov. 1

It’s a combination that makes perfect sense: Pizza and beer. Despite challenges facing local restaurants, a new pizza kitchen is set to open inside NOLA Brewing Company on Tchoupitoulas Street Nov. 1.

The new venture is called NOLA Pizza Co., but the spot will focus on traditional New York-style pizza.

NOLA Pizza Co. takes over the former McClure’s Barbecue, with a 5,300 square foot, recently-renovated dining space for outdoor and COVID-friendly indoor dining. Multiple areas and rooms around the tap room include an upstairs dining area and balcony, as well as a spacious patio on Tchoupitoulas. TVs are situated throughout the space, providing a perfect perch for game days.

At the helm of the new pizza joint is culinary director Brandon Byrd, with a unique ability to replicate the process that separates New York pizza from the rest. Byrd will work closely with brewers to ensure a “perfect formula” for the pizza dough.

“There are three major components to making NYC style dough: water, yeast and fermentation,” Byrd said. “Through reverse osmosis, we are able to strip down the water and recreate the exact mineral and pH content of New York City water and keep it consistent, which is something that is tough to do here in New Orleans.”

Byrd said his two-day proofing process gives this dough a more open crumb structure, nuanced flavor and texture than quick-proofed dough.

The menu at NOLA Pizza Co. will focus on “simple, thoughtfully prepared” pizza categorized into red, white and square. Pies run the gamut from classics like mushroom, olives and onions; and white pizza with ricotta, provolone, garlic and parmesan. More creative options include a combination of sausage, broccoli rabe, breadcrumbs and pecorino; and a square pizza with vodka sauce, pepperoni and basil.

Diners can also enjoy salads including a traditional Italian with romaine, breadcrumbs, parmesan and creamy garlic dressing, as well as Heroes such as eggplant parm, meatball, and chicken marsala. Desserts, like a Nutella bun or classic tiramisu, are also on the menu.
