Ochsner and Caluda’s partner for low-carb, gluten-free ‘Eat Fit King Cake’

Ochsner Health System’s Eat Fit program announces an Eat Fit King Cake, a healthier king cake option for a guilt-free Carnival. The 12-ounce mini bundt-style king cake is gluten-free, grain-free, low-carb and keto-approved, Ochsner describes via its website.

Molly Kimball, registered dietitian and founder of Ochsner Eat Fit worked closely with John Caluda of Caluda’s Cottage Catering to develop this Eat Fit King Cake.

The new king cake option seems to consider several nutritional preferences. Dieters worried about king cake killing their keto diet and people staying cautious about gluten food allergies can both find a solution.

Centered on an all-natural clean ingredient label, the Eat Fit King Cake is made with almond flour, coconut flour, and Greek yogurt. It’s sweetened with Swerve, a natural, plant-based sweetener based in New Orleans, with no artificial sweeteners or food dyes. The king cake’s cinnamon ribbon is made from coconut oil and cinnamon, while the glaze is made with Swerve, water and natural food coloring.

Ochsner says they’ve received “overwhelmingly positive” feedback from tasting panels. They cite the use of almond and coconut flour for an appearance and texture close to a traditional king cake. Ochsner also describes the king cake as “incredibly moist, almost like pound cake meets king cake.”

Several retailers around the New Orleans area see the Eat Fit King Cake including Langenstein’s Market, Ochsner Pharmacy and Wellness on Jefferson Highway, FUEL Cafe + Market at Ochsner Fitness Center, Earthsavers, Romney Studios, Zuppardo’s, NOLA Pharmacy and PJ’s Coffee at Ochsner Covington.

Pricing ranges from $13 to $15.

Other local bakeries are also pushing out healthier king cake options. Breads on Oak offers vegan and organic, plant-based king cakes. Shake Sugary features vegan and gluten-free options, including a gluten-free pralines and cream cheese king cake. Waffles on Maple has a gluten-free medium king cake.
